Minimalism Meets the Burrito
With both of us having grown up in Southern California and and one of us who went to school in Northern California, it’s safe to say we’ve had our fair share of Mexican. We could partake in the age-long argument of who does it better (NorCal or SoCal) or just say that there are gems to be found throughout ALL of California and that if you look hard enough, you will find the dankest of the dank in all regions. I think we’ll stick with the latter.
Our experiences with El Sauz are very different. This year was the first time I got to experience the magic that is El Sauz (thankus babus!); whereas, this was a childhood staple for Mike. Located in Glendale, CA (v important: please be extra wary when driving to and from), this establishment is your classic, no frills taco shop. They don’t have an extensive menu (asada, al pastor, cabeza, lengua, pollo, barbacoa) but what they do serve, they do damn well. Sometimes you want a juicy, oily burrito oozing with sour cream, guacamole, rice, beans, salsa; the whole works. You don’t come to El Sauz for that. You come to El Sauz for a minimal experience where the flavors of their meat take the stage. Mike has been eating the same thing since he was capable of chomping down on burritos: their carne asada burrito with no beans. No beans basically translates to extra meat which is never a bad thing. The meat is tender, flavorful, rich and buttery. The burrito contains the holy grail of ingredients and nothing more: meat, cheese, salsa, onion, cilantro and beans if you are so inclined. A truly minimal burrito with mouth-watering flavor that allows you to enjoy and appreciate the flavors of each ingredient in their own right.
